Even in the era of a pandemic, local pizzerias, thanks to the take-away action, have done quite well financially. Nevertheless, it is already visible how hard the pandemic has hit the entire catering industry. Many restaurants and small eateries have fallen into their place, but after lockdown, new ones will arise, because no business or empty spaces.

When opening your own pizzeria or restaurant, in which pizza will be an important element, it is necessary to buy a good-quality pizza oven. A good quality oven, i.e. one that is strictly dedicated to baking pizza.

Which stove to choose, with what it is fired with, what quality and what capacity. These are many difficult questions asked especially for novice gastronomic establishments. We will try to describe in this article both the types of pizza ovens and their possibilities, advantages and disadvantages, allowing you to choose an oven that is cheap to buy, use and at the same time bakes a delicious pizza.

GP | Types of pizza ovens - comparison of possibilities
Considering the possibilities offered by individual types of pizza ovens, restaurateurs have a lot of room to show off. Let's start with the three basic types of stoves, they are:

  • wood fired pizza oven,
  • gas fired pizza oven,
  • electric pizza oven.

These three types of stoves are actually the basic division. The next ones are related to the number of chambers, the method of spreading the dough, making the chamber itself or the method of temperature distribution. For wood-fired pizza ovens. This is the most common type of oven used in open-air pizzeria. A large, two or even three-chamber wood-fired oven is an extremely spectacular element of a pizzeria's equipment. In the case of electric or gas stoves, these must stand in a specific place, inside buildings.

The capabilities of pizza ovens are very similar to each other. Obviously, the greatest power will be obtained from gas-fired furnaces, due to the calorific value of gas and thus the possibility of heating multiple chambers at the same time. The smallest stoves are electric stoves and these are also the most expensive if not in use. However, they have great possibilities in terms of precise temperature control, as well as very precise heat circulation in the chambers, which is not available in wood-fired stoves.

GP | A gas, wood-fired or electric pizza oven - the factors that determine the choice
Since we have made a preliminary division and comparison of individual pizza ovens, it is worth paying attention to the factors that should be considered when choosing a specific oven.

Of course, the most important factor has always been the price. In the case of pizza ovens, the cheapest choice will always be to choose an electric oven, but this does not mean that this choice will always be the best choice. If a large number of people pass by in a pizzeria, we want to be able to increase throughput, or we want to cut operating costs, then a wood or gas-fired oven will be the cheapest solution. Gas stoves are expandable, however, they require appropriate exhaust and ventilation ducts, just like wood-fired stoves. The latter, however, can be successfully installed in the garden of a restaurant.

To sum up, if you want to buy a cheap and relatively efficient pizza oven, it is best to invest in an electric oven, if you want to buy a very efficient, large, expandable oven, it is best to choose a gas oven, if you want to bake a pizza in the garden, choose a completely garden oven or one based on Italian style, it is best to choose a wood-fired stove.
