Convection oven vs. combi steamer - differences

The convection oven is the predecessor of the continuously upgraded combi steamer. Nowadays, both these appliances can basically stand side by side in the kitchen, because although their basic functions are quite similar, they complement each other perfectly.

The convection oven, as the name suggests, uses convection, i.e. the phenomenon of putting warm air into motion. High-powered fans force the heated air into the chamber, which is then drawn back into circulation, cleaned with filters, reheated and forced into the baking chamber. In this way, it is responsible for the thermal treatment of the food. This solution, above all:

  • enables the food to be heated evenly until a satisfactory result is achieved,
  • prevents aroma transfer between oven levels, so that aromas from the lower shelf do not mix with those from the higher shelf,
  • allows dishes to be baked evenly and faster.

The main difference in the operation of the convection oven and the convection/steam oven, is that the pressurised air forced into the cooking cabinet works horizontally and not vertically. The latter also offers, in addition, the possibility of steaming, cooking and blanching using steam. It therefore allows you to control not only the temperature, but also the humidity level inside the chamber.

The combi steamer and its possibilities

Convection steam ovens have a similar external design to the classic oven, however, inside (depending on the size of the model) there are additional fans and special devices which allow the "management" of steam, air and temperature. Thanks to these, the above parameters can be adjusted very precisely. The appliance has a complete control system, allowing control of:

  • the temperature inside the chamber,
  • ventilation inside the cooking cabinet,
  • the baking time for individual dishes,
